Beer, Combos, and Fantasy Football

Mal and Murphy are having quite the night tonight. They’ve got beer and Combos and fantasy football on the agenda.

Dinner

A couple of week ago, the folks at PAMA sent me a sample of their Pomegranate Liqueur to review on my blog. They were also hosting the Cooking with PAMA Contest for a chance to WIN a trip to the FOOD & WINE Classic in Aspen, so obviously, I had to enter a recipe. FOOD & FINE Classic in Aspen!?!?! Yes, please! :mrgreen:


Pomegranate Pumpkin Ravioli


Serves 4


Ingredients:



4 tbsp PAMA Pomegranate Liqueur
1/2 cup canned pumpkin
1/2 cup low-fat sour cream
1/2 cup low-fat milk
1 tbsp all-purpose flour
1/4 tsp salt
1/4 tsp ground cinnamon
1/2 cup grated Parmesan cheese (fresh)
Shake of nutmeg
Roasted pumpkin seeds (optional)
1 package of frozen cheese ravioli

Directions:



Combine all ingredients in a sauce pan (minus the pumpkin seeds and ravioli) and blend well.
Heat sauce on low heat and continue to stir until smooth.
Cook cheese ravioli as directed on package.
Top ravioli with sauce, pumpkin seeds, and additional grated Parmesan cheese.
Serve warm and enjoy!

The Pomegranate Pumpkin sauce was delicious! It was great on raviolis as well as by itself… or on crackers! ;-)  I could not stop eating it!


The texture was nice and smooth– almost like a light pumpkin mousse, but not nearly as sweet, a tad cheesy, and with a tart kick of pomegranate from the PAMA liqueur. I wonder how it would taste mixed into oatmeal?

Afternoon Eats

After breakfast, I grabbed an iced coffee to take with me to NuVal. It was a chilly morning in Boston today, so it took me quite awhile to finish my iced coffee. Just the thought of cold weather made it tough to drink! Of course, I managed! ;-)

When I got home from work, I made lunch #2: toasted potato bread with Cowgirl Creamery Mt. Tam cheese, sliced apple, and a drizzle of honey. Holy yum!


I ate the remaining apple slices with a little more Mt. Tam smeared on them.

While the guys do their fantasy football thing, I’m off to veg and catch up with my DVR. I’m so behind on all of my shows: The Hills, The City, The Office, How I Met Your Mother, Big Bang Theory, Modern Family, Ellen, and Oprah! Lots of boob tube time ahead!
