Best egg scramble ever!

Ohhh what a day it has been!!!  Seriously, I don’t even want to talk about it.  Sooo lets talk about the highlights of today:

and my highlights….seriously, in my hair, I got some tonight.  :)

First thing today, I headed off to meet Kim at the gym for a 6:30 sweat session with Shaun T and all his Insanity craziness. First, the pre-workout fuel was consumed



So simple, but so wholesome and good! Unfortunately, there was no Keurig cup of coffee because I have yet to figure out what box my coffee pods are packed in.  Ohhhh coffee pods….WHERE ARE YOU!?!?!?! 


Kim and I were dying this morning!  I am truly convinced that since we are slowly getting better at Insanity every time we do it that we therefore push ourselves a little bit harder every time, therefore we’re dripping with sweat and still exhausted after every single dvd!!  After yesterday’s Insanity fit test and today’s dvd, I’m feeling it….hello butt!


I came home from the gym for my normal routine before work, minus the answering emails/blogging/stalking other blogs part thanks to STILL not having any internet.  So glad that my sister and parents live close by so that I can pop in for a visit and a quick blog post in the evenings!  :)   Breakfast was devine!  Check it out:



The insides of my Saturday night Barberitos burritos, which consisted of:



spinach
black beans
little chicken
little cheese
avocado
mushrooms
tomatoes
jalapeno

I added these to a pan and heated them back up and then added 2/3 cup All Whites egg whites and scrambled.


Then added this new purchase….



Hello you amazing-looking all clean ingredient list loaf of bread!


Plated it all up and added some of Jen’s homemade salsa to my eggs and enjoyed.



This ranks up there as one of the best, if not the best, egg scramble ever! And let’s not forget my misto I washed it down with.  :)


Following a few morning appointments, lunch time rolled around.  I had packed all the ingredients to create ”clean” chicken salad



1 can of all white meat chicken (drain)
2 spoonfuls of low-fat, plain yogurt
dill weed
purple grapes, chopped
walnuts

I scooped the chicken salad out onto 2 slices of my newest purchase of bread.



Paired my sandwich with a sliced up apple.


 


Lunch was delicious today, too. 


Moving right along…..


Snack this afternoon was another new purchase. 



This things are sooo good!



And obviously I had more than 3 of these little babies.


I sped home like a mad woman today to grab a quick bite before heading off to get my hair done.  Literally threw together dinner in like 5 minutes and then I was back out the door.  Dinner started off with a simple microwavable Amy’s wrap.


 


I encourage keeping items like this in your freezer for times like this.  An organic Amy’s wrap is a much better dinner option when you are on-the-go than fast food.  I paired my wrap with 2 carrots and some grapes.



While I really wanted a cup of coffee on my way out the door, I opted for hot tea instead (remember the coffee pods are randomly missing)



Umm gag me!  I was totally disappointed in this tea…..I thought I was drinking lemon kitchen cleaner.  :(


Came home from getting my hair done and I was having a sweet tooth. I cured it with a bowl of Cascadian Farms Cinnamon Crunch cereal topped with skim milk.



Delicious!


Well, I’m hanging out at my sister’s apt with her, my hubs, and my cousin.  Soo I’m getting off here to go hang out with them for a few.  Night!
