Better day than yesterday

By Blog of Shannon (Visit website)

Hi!  Posting a little late tonight, but I haven't been at the computer too much today.  I woke up this morning and ran 7.5 or 8 miles, not sure of the exact distance because I got a little turned around whenever I decided to run a side street I had never been down before.  I thought it went one way, but ended up going a different way which added some additional mileage and a killer hill before I finally made it back to familiar surroundings.  I'm hoping that this was the last hot run for the year.  The weatherman told me the other day that a cold front was moving in.  Hopefully it will be coolish weather for good.  I gobbled this down before leaving on my run:

Water + multigrain toast with Barney Butter

It was a great run, but my legs are a bit sore now.  Lake City is pretty hilly for Florida (there's lots of sink holes throughout the city--the local high school is sinking in to one slowly), and my run included lots of those hills!  My knees are doing great though.  I iced them for 20 minutes right when I got home:

Icing is key to not having sore knees.  Last Saturday whenever I didn't have time to ice, they hurt me all day long.  While I sat in my kitchen, icing my knees, I made a to do list for the day:

I knocked a few things off that list today, but not all of it.  I was moving pretty slowly, admittedly--just because I could.  After icing, showering and brewing coffee, I had a yogurt mess in an almost empty Chobani container for breakfast:

~1/3 cup greek yogurt1 small banana2 tsp pumpkin granola (+ 1 tsp straight into my mouth)2 tsp wheatberries

Delicious!  Thad is still sick, poor guy.  He has a fever and just looks pitiful.  Maybe it's not the flu because I'm not even the slightest bit sick (hooray!).  I half expected to be blogging today that I was starting to feel ill, but thankfully that's not the case.  Hopefully, Thad will feel better before the work week starts back up.  I made him some hot chocolate earlier so I'm sure he'll be better in no time ;).  For lunch, I got in some veggies per usual:

Ezekiel sprouted grain bread
Laughing Cow Lite cheese wedge2 slices tomatoSprouts+ carrots and Sabra roasted red pepper hummus

Thinking back on my day, I'm not sure how I only managed to knock a few things off my list.  I did a lot of school research which consumed lots of time.  Thad and I are still talking it over.  Lots of things to consider.  For dinner, I made a London Broil using this recipe.  This was an awesome recipe for a London Broil.  I highly recommend it.  The only change I made was that I didn't have any shallots, so I simply omitted them.

London BroilMy grandpa's green beans (doesn't get much more local than that!)Roasted potato wedgesFor the potatoes, I cut 2 yukon gold potatoes into wedges, then tossed them in 1 tsp olive oil, 1/2 tsp thyme, 1/2 tsp oregano, S&P, and 2 sprigs of chopped rosemary from my garden.  I roasted them at 425 for 25 minutes.  Perfect.  I had two more straight off the pan.  It was a great dinner.  Thad agreed.

I've snacked on some Kashi Go Lean crunch throughout the day and on some more of the POMx iced coffee vanilla that I opened the other day.

Gotta go finish watching the Gators beat LSwho!
