BIG CHANGES

By the pseudo-vegan (Visit website)

In January, I attended a workshop held by Lindsey. Lindsey is a graduate of the Institute for Integrative Nutrition, and I found her by google-ing IIN and Pittsburgh. When I found the school, I was absolutely ecstatic about it and wanted to talk to someone who attended. Who knew two months later, I would be making drastic changes!

One of IIN's teaching tools is a wheel called the "Circle of Life." It is composed of confidence, spirituality, education, career, finances, health, physical activity, home cooking, home environment, relationships, social life, and creativity. All of these things are interrelated and you need to find some sort of balance to find happiness. Nothing will ever be perfect, but it is so important to be aware of what you need to work on and improve. Lindsey was the first person to introduce me to this concept and increase my awareness of the areas in my life that are lacking.

Two months later, I am enrolled in the Institute for Integrative Nutrition. I have a new job, my dream job, the Neonatal Intensive Care Unit. I am moving home to my family and my best friend! I am improving relationships and friendships. I am eating healthy and delicious, home cooked meals. My thyroid is finally back in the normal range. I am feeling healthy, confident and happier!

Something else is getting an upgrade too...

Sorry, Hamilton Beach, you are just not cutting it anymore.

Friday is the day, when the almighty Vitamix will enter my life and make BIG CHANGES.
So much more than a blender! :-)

Raspberry Monster
1 cup frozen raspberries
1 cup almond milk
2 large handfuls of fresh spinach
1 tablespoon of chia seeds
1 medium banana

Blend everything together! The rich red of the raspberries overpowers the spinach greens, and this "green monster" isn't quite so green!

Raspberries are very nutritious, full of antioxidants, protect against cancer, and pack a powerful punch of Vitamin C and fiber! source

I haven't had raspberries in a while, and it was a nice change!

and more changes to come.. !
