Birthday Dinner
Hungry husband is getting a year older and a whole lot wiser (I hope). That could mean only one thing; a home-made celebration in his honour. I love celebrating birthdays even if it means searching and planning for weeks to find the perfect gift, the funniest card, and the best meal from scratch. As it is the case with most well made plans, things like life, get in the way. The plan was to take a day off from work and prepare a 4-course meal, paired with the best wines. I figured It'd be nice for us to have a leisurely meal without the usual weeknight rush. Unfortunately, that wasn't in the cards. Crazy busy work day meant I only had (at most) an hour to cook a meal before hungry husband got home. Hungry husband's palette is very welcoming to South Asian and Middle Eastern flavours. But with the lack of time, I couldn't possibly delve into a complicated South Asian-inspired meal. Instead, I decided to make one of my favourite Köfte (meatball) Kebab recipes. If you like, you can also add chopped red onions. The key is to chop all the veggies the same size so every spoonful gets you a bit of everything. The dressing is a mix of good olive oil, red wine vinegar and lemon juice. Plus salt & pepper. Be generous with the olive oil because when you finish the salad, you can go for a dip with your bread and get a taste of all the flavours left behind. Now the main dish. There are a few components to the Köfte Kebab recipe. First, you have to make the Köfte (meatballs). Very easy to make. Recipe here. In fact, the most difficult part is getting your hands in the ground beef, but just think how much your hungry family will appreciate your efforts. Make long, flat kebabs (as you see in the picture to the right). Pop in the oven for 20-25 minutes at 350 degrees. Be sure not to dry them. The second part is the tomato sauce. It consists of butter, garlic, chopped, fresh tomatoes and a tablespoon of tomato paste. Bring to a boil and then let it simmer for 10 minutes. Third, you need some pita bread. Get your kitchen scissors and cut up pitas into bite sizes. Put on a baking sheet and drizzle with olive oil and pop in the oven just until they get a nice colour and crunch. And finally, take out some yogurt from your refrigerator. At this point, I hope your mouth is watering because my hungry husband was anxiously waiting for me to plate everything. First, put the pita bites on a plate and then lay two or three of the Köfte Kebabs on top of the pita. Top with the tomato sauce and then the yogurt. If you like, you can also melt some butter and drizzle that on top of the yogurt and end with hot pepper flakes. You can serve with a side of salad or white, plain rice as I did. How could hungry husband resist?... he couldn't. It may not have been a 4-course meal but I know it was very special. This was the very dish that I made for him, when he visited me while I lived in the States. It was my little way of saying, "hey, thanks for going through airport security..."
