Birthday Starter: Goats Cheese Tarts with Red Onion Marmalade.
Any good dinner party starts with a starter. It's the only way to get things started.
This is one of those starters that you see on every menu and get sick of seeing. Like chicken liver parfait. There is nothing imaginative about it whatsoever, but wowwowweewah it tastes good. I Love goats cheese- chalky and creamy and salty, and the way it sticks to the roof of your mouth. The marmalade was beautiful too- i wish you could see it in the photo. It was bordering on too sweet, but the balsamic and the alkaline of the cheese worked with this perfectly. I had a party in my living room but the real party was in my mouth. Did i make my own pastry? Did i heck. I bought it frozen and i'm not ashamed. I don't do pastry. You will need (to serve 6): 2 blocks of frozen puff pastry1 log of goats cheese1kg red onions5 cloves of garlic, finely chopped.Big knob of butter120g caster sugarFresh thyme 250ml red wine.100ml white wine vinegarEarly on in the day, make your marmalade. Peel and half your onions, and cut into long strips. I tried every method there is to stop my eyes watering, but with no success. Be warned. Heat a wide deep pan and melt the butter. Chuck in the garlic and onions and glaze in the butter. Add thyme leaves, sugar and salt and pepper. Stir and reduce heat. Cook with the lid off for 4 minutes, stirring occasionally. The onions should be soft enough to break, and will smell beautiful and caramelized. Next add the red wine and the vinegar. Simmer on a high heat for 25-30 minutes. The liquid should reduce by about 2/3, and the onions should be sticky. Leave this to cool. Get everybody a drink and get on with putting the tarts together. Preheat the oven to 220c. Flour a surface and roll out the puff pastry. I got 4 tarts from each pack. I just rolled it out and cut it into squares. Put a dollop of marmalade on each, and then slice the goats cheese, and place a wheel on top of each tart. It really is as easy as this. Line a tray with greaseproof paper and space out the tarts. Bake these for 20-25 minutes until they have risen and the cheese is bubbly and browning. Dress with a little balsamic vinegar and some rocket or tomatoes. Yum. related searches : Birthday
