Bolo de Arroz or Portuguese rice muffin
![]() For today's culinary tour we are off to Portugal!!! We have a bakery in the area that is renowned for their confectionery and take away meals. People in Cape Town should all know the Coimbra in Claremont ( If you don't, make a plan to get there!!!)I popped in recently to have a cup of coffee, when out of the bakery came this heavenly smell of vanilla and lemon. Soon to follow was a tray full of these delicious-looking, icing-sugar dusted cakes. The baker told me that they are called Bolo de Arroz of loosely translated: "Portuguese Rice muffins." Of course I had to buy a couple and on my way back home, I could see visions of Bolo de Arroz with homemade lemon curd and strong black coffee.The cake was yellow and reminded me of a corn muffin yet the taste was far superior and "cakier". It had hints of vanilla and lemon and tasted utterly sublime with this lemon curd. I was unsuccessful in finding a recipe for Bolo de Arroz, so if anyone can help, I will be most grateful. I wanted an easy yet rich lemon curd recipe and I found just that on House of Annie. I like the recipe, because it is super easy and requires no " beating over a pot of simmering water". The curd is made on the stove top on a very low setting and the result is creamy and smooth..just the way I envisaged it.
