BRINJAL (KATHIRIKKAI)  GOSTHU- STEP BY STEP



For this recipe you need



4 - 5 nos. of  Brinjal/Kathirikkai

2 onions

2 tomatoes

1/2 tsp. of turmeric powder

1 tsp. of chilli powder

2 tsp. of gosthu powder

1 tbsp. of tamarind water

Salt



For seasoning



1 tsp. of mustard and urad dal

A sprig of curry leaves

2 red chillies

2 tsp. of chana dal

A pinch of Asafoetida



Gosthu Powder



3 tsp. of chana dal

3 tsp. of coriander seeds

4-5 red chillies



In a pan, roast all the ingredients seperately,allow it to cool and grind it to smooth powder
Preparation



Wash and chop the brinjals, Heat oil in a pan, add the chopped brinjals and saute it well until they gets softened.





Allow the brinjals to cool ,grind it in the blender and keep it aside.





Heat oil in a heavy bottomed pan, add the mustard seeds when they stop spluttering add the mustard seed.





Add the curry leaves, chana dal, split the red chillies and add it along with a pinch of asafoetida.





Add the chopped onions, saute it until they turn translucent.





Add the tomatoes, along with turmeric and chilli powder .Mix it gently and allow the tomatoes to get cooked well.





Add the grinded brinjal paste along with sufficient water along with tamarind water and stir it gently.





Add the Gosthu powder , mix it well and allow it to boil. Finally garnish with coriander leaves.





Brinjal Gosthu is ready to be served...................





Serve it hot with Hot Idli's/Crispy Dosa's and enjoy................:)





Note:

Make sure the gosthu powder gets mixed well or else dilute it with water and add to the gravy.
