BROCCOLI AND TUNA PASTA SALAD
![]() I just realized that I have posted some really good-for-you recipes made with vegetables, tomatoes and lots of good stuff. That is a little unusual for me because as some of you know I am the Queen of Desserts. I adore sweets and would rather have a dessert meal! Heaven. But I do know that many of you like to eat delicious healthy foods with lots of veggies. Italians love their veggies, except maybe this Italian gal. But guess what, I do like broccoli and I adore black olives. They are one of my favorite snacks. Enjoy this recipe. 8 oz. penne, rigatoni or ziti pasta 3 T. olive oil, divided 1 T. vegetable oil 1. c. broccoli, cut in bite-size pieces 2 cloves garlic, minced Salt and pepper to taste 2 T. pesto 2 T. chopped scallions 1 (12 ox.) can tuna in oil, drained 4 plum tomatoes, chopped 10-15 black olives, sliced Parmesan cheese Cook pasta, drain. Add 1 T. olive oil. Set aside. In saucepan bring water to boil, add broccoli and cook about 3 minutes. Drain. Heat the remaining 2 T. olive oil and the vegetable oil in large skillet. Add broccoli, garlic, salt and pepper. Cook until broccoli is tender. In large bowl, combine the broccoli mixture, pesto, scallions, tuna, tomatoes and olives. Arrange in serving dish and sprinkle with parmesan cheese. Serve warm or at room temperature. Refrigerate leftovers. related searches : Broccoli
