Brown Basmati Fried Rice
There was only one at home. So, it was Veg Fried Rice. The nutty texture of the rice is very similar to our Kavuniarisi, a sweet dish from Chettinad. The Fried Rice was colourful and attractive. Ingredients: Brown Basmati - 1 cup Carrots - 1/2 cup, chopped Capsicum - 1/2 cup, chopped Cabbage - 3/4 cup, chopped Peas - 1/2 cup Onion - 1/4 cup, chopped Green Chillies - 5, slit Ginger-Garlic Paste - 1 tsp Oil - 3 Tbsp Red Chilli Sauce - 1 tsp Soya Sauce - 1 tsp Salt - 1 1/2 tsp (to taste) Wash and soak Basmati Rice for 30 minutes. Cook in plenty of water until cooked, but firm. Finely chop the vegetables. Drain and cool the rice. Heat oil and saute the chillies, ginger-garlic and onions. When onions turn pink, add vegetables and chilli powder. Saute over high flame for 2 minutes. Sprinkle water and simmer cook for 2 - 3 minutes until vegetables are cooked. Mix in cooled rice. Stir fry for 2 minutes. Serve Hot.
