Buffalo Bites

I did some entertaining last weekend and I decided to shake up my appetizer routine by taking one of my favorite treats, buffalo chicken wings, to a different place. The vehicle? Puff Pastry. Everyone thought it was a winner, but in retrospect I think I should have made them smaller, so I switched the recipe up to change that. The picture is not good, because my husband took it while I was cooking the main entree. I think you will like them, so give them a try regardless of the ugly picture!

Buffalo Chicken Bites


1 sheet of puff pastry, thawed

2 breasts from a rotisserie chicken, shredded

2 ribs of celery, chopped fine

1/4 cup onion, chopped fine

1/4 cup of butter

1/4 cup franks hot sauce

1 garlic clove, minced

1/2 tsp dried oregano

1/4 cup Blue Cheese crumbled

1 egg beaten, mixed with 1 T water


Preheat oven to 425 deg. Roll out the sheet of puff pastry and cut into 16 squares (4×4). Melt the butter in a pan and saute the onion, celery and garlic until just softened. Add the hot sauce and oregano and stir until combined. Add the chicken and stir to coat. Place 1/16th of the mixture in the center of each square of pastry. Place some blue cheese on each one and bring the pastry together and pinch well, (they will come apart in the oven if you do not get a good seal. Brush the bites with the egg wash and bake for 15-20 minutes or until golden brown. Keep an eye on them, as you don’t want them overdone. Serve warm
