Cabbage-Chickpea Flour Steamed Savoury Cake(Gobi-Besan Vadi)
For different variations see Notes...We enjoy all..But,our favorites r hare dhaniye ki vadi(cilantro)lauki vadi (Bottlegourd) and these gobi vadi(cabbage)..wil share the deep fried dumplings,stirfry round discs,chaats,instant idlis with different veggies soon...til then njoy this steamed ,spicy n savoury cake in any curry( i enjoyed these in simple onion curry with sorghum flour rotis and rice.)...or with ur fav dips,chutneys. 2 cups very finely chopped cabbage(can use bottlegourd/zucchini/spinach /cucumber instead) 1 cup gram flour/chickpea (besan) 2 tblsp whole-wheat flour and 1 tblsp of millet flour/sorghum flour and 1 tsp cornflour(optional) 1 tblsp dried fenugreek leaves or fresh chopped fenugreek or chopped cilantro..i used dried fenugreek, 1 tsblp ginger-greenchilly-garlic paste(1" ginger,3-4 chillies,5-6 garlic),pinch citric acid,1/2 tsp cumin seed (jeera),1/2 tsp turmeric,caromseeds(ajwain)-1/2 tsp,1/2 tsp sugar Salt to taste 1 tblsp Olive oil,water-if reqd Tempering-1 tblsp Ghee/Clarified Butter,1/2 teaspoon mustard seeds Garnishing-chopped cilantro (hara dhania),fresh shredded coconut Method: Combine all in a bowl along with flours,cabbage,spices,oil.It should be like a soft cake mixture.add water only if needed. Grease a dish(i used a round steel cake pan) with some oil and pour the mixture..tap it well. Add enough water in steamer bottom and place the plate in it (keep a stand to see tht the water just touches the plate is nt coming in . Cover and steam for for 15-20 minutes. Check they are ready by putting a knife through and it should come out clean. Remove and Let it cool a bit and then slice them in desired shape.keep in the same pan and add the tempering and garnishing.Just before serving add to gravy.Serve warm as appetixer,sidedish or in any of ur fav.curry. (U can deep fry and top with some sesame seeds or add 2-3 tblsp oil,mustard seeds,cuminnseeds,sesame seeds,curry leaves and stir fry til u see little browing and add these to gravy)... Note- 1)This can b made in the pressure cooker too without the whistle.. 2)There r different variations making this- a)can steam this mixture in idli mould and enjoy instant idlis. b)by adding a little more flour can b made into cylindrical logs and after they r steamed cut them into small discs and deep fry or shallow fry.great as appetizers. c)with the same mixture make small fritters by hand and steam them on steamer basket and serve as fritters. d)can make in dhokla moulds as wel. 3)Divide the mixture in 3-4 portions and add different raw veggies(can use carrots/peas/beets/cilantro to add color and also can use above mentioned veggies) and steam.visual treat for the eyes.kids would love these green,red,orange color dumplings.. 4)Steam,Stirfry or deep fry(as per personal wish) and top with sweet tamarind-dates chutney or any fruit chutney and spicy cilantro chutney sprinkle ample amount of sev(indian snack) and enjoy as chaat... So does any of the above option work for ur next potluck party...??????
