Cabo Baked Pork Chops

After the gorging of sugar during the holidays I have been craving savory stuff.  I can't even look at anything sugary (which I guess works great for my new food journey).  And for the past couple of days I've been assembling Paleo recipes for the beginning of my journey in January, and my kitchen has become a test kitchen.  I found a recipe for Zesty Chicken Breast that really caught my attention because of the combo of spices used in it.  They are exotic and I never really get to use these spices so I was excited to try them!  Plus, since I had been craving pork chops, I thought this recipe would work well with pork.  So, I gave it a try and really liked it! I call this recipe the Cabo Baked Pork Chops. 


I call it so because it reminds me of this seasoning I tasted during a trip to Cabo San Lucas; the taste of this sauce took me right back there.  Ah, good times, good time.... Ok, back to earth... Hello! Back to earth, Angie!  Ok, I'm back.  Where was I? Oh, yes, ingredients.  I adapted a few things on the ingredients to suit my taste a bit more, but these are the basic ingredients:

6 garlic cloves
3 tbsp lemon juice
1 tsp turmeric
1 tsp cumin
1 tsp paprika
1 tsp white pepper (black pepper works well also)
1 pinch of saffron
1/2 tsp chipotle chili pepper
1 tsp onion powder
1/3 cup of olive oil
4 lean pork chops (I like loin chops)

Steps:
- Preheat the oven to 370 degrees Farenheit.
- Put all the ingredients (except chops, of course) in a blender until everything is combined.
- Brush some of the sauce on the chops and put in the oven for 20-25 minutes, depending on the thickness of the chops.  Turn them over and brush them again with the sauce, and cook until done (about 15 more minutes).
- Once cooked, let them rest for about 10 minutes.  You can spoon some of the sauce over the chops, but they are so tasty that for me they did not need any of this delicious sauce.  Although, isn't that color fabulous?  Thank the saffron for it.


The combination of the pork and lemon was really good, and it made the chops feel lighter in taste.  The spices also give the chops a very earthy yet zingy flavor that does not over power the taste of the pork but just enhances it.  I really loved this recipe and it is definitely going in my Paleo recipe box.  Buen apetito!
