Cajun Prawns And Rice Vermicelli Fried
I had some Cajun prawns and crab sticks stir fry left over when I cooked it the other day. I thought that would make a delicious meal with fried rice vermicelli the next day. Prawns, or shrimps, are my hot favourite. I knew I would love this dish. It was very delicious indeed. Rice vermicelli is a great favourite in Malaysia, as in all other Oriental countries. It is commonly cooked in soup, fried with sauce or just dry fried and eaten any time of the day. I usually cook this for lunch or parties. Rice vermicelli comes in different sizes, from very fine ones to fairly thick ones. I usually use the medium ones as the fine ones are too delicate to cook and the thick ones take too long. This recipe is very simple and quick. This vermicelli has 3 pieces in a packet. I only used 1 piece for 2 persons. Ingredients Heat up a frying pan or wok and add in the left over cajun prawns. Fry until heated through. Dish up and set aside. Heat up some fried shallots or garlic oil in a frying pan or wok. Add in the spinach and a little chicken stock granules and stir fry. This spinach is very tender and delicious and should be cooked very quickly. Dish it up and set aside. This spinach is very delicious and so far I can only get it at the Chinese shop. You can also use other type of green leafy vegetables. Put some water in a pot to boil. When it comes to a boil, turn off the fire and put in the rice vermicelli. Use a fork or a pair of chopsticks to stir to loosen it up. Use the fork to pick up a a strand to test for doneness. If it can be cut with our fingers, drain and soak in cold water to prevent it from cooking further. This just takes a little while. do not overcook the vermicelli at this stage otherwise it will be too soft and it won’t be delicious. The vermicelli should still be in long stands after you fried it. It will break into short lengths if you overcook it. Heat up some garlic oil, including garlic bits, in a frying pan or wok. Drain the rice vermicelli and pour it into the wok. Add a little light soya sauce and keep frying until fragrant and dry, maybe 1-2 minutes. Add the cooked spinach and mix well. If there’s any sauce in the spinach you may want to leave that out which I did because I didn’t want my fried vermicelli to be wet. Dish up into individual plates and scoop the cajun prawns and crab sticks stir fry on top. Serve hot. Note that the cajun prawns dish is already salty enough so do not add too much soya sauce into the vermicelli or too much chicken stock granules into the spinach.
