Carrot Pachadi (Carrot Raita)
Raita is a side dish based on yoghurt, mixed with onions. The yogurt is usually seasoned with coriander, cumin, mint and pepper.
However, vegetables like cucumber and carrots are also added according to tastes. It's served chilled and has a cooling effect on the palate which makes it a good foil for spicy Indian dishes. Cucumber is not included in authentic versions of the dish, because Ayurvedic tradition seems to consider a mixture of cucumber and yoghurt to be harmful to the body. ![]() Ingredients: 4-6 Carrots washed and peeled 1 onion 1 tomato 2 or 3 cups of Yoghurt 1 green chilly A pinch of pepper A pinch of pre roasted cumin powdered Salt as necessary 3 Tbsp of coriander leaves 3 Tbsp of mint leaves 1 tbsp Lime juice Method: Chop the onions lengthwise very finely. Add salt and reserve for few minutes. Chop the tomato lengthwise finely; deseed the green chilly and cut into very fine and small round pieces. Grate the carrots and mix all the ingredients together with the yoghurt. Garnish with fresh coriander and mint leaves. related searches : Carrot
