Cashew nut rice

Cashew nut rice




Ingredients
1 cup Basmati rice
8 Cashew nuts
1/8 tsp Turmeric
3 tbsp Oil
1 Green chili chopped
¼ tsp Mustard seeds
10 Curry leaves
½ Lemon juice
Salt to taste
Method
Wash the rice 2 or 3 times with water and soak for 30 minutes. In the meanwhile soak the cashew nuts in 1 cup water for just 15 minutes. Bring water to a boil when boiling add the rice, turmeric powder and ¼ tsp salt. Rice should take about 11 minutes to cook. 
Add a bit of oil leave for a minute and then throw the water and leave to dry. Spread out on a tray and leave for 30 minutes. In a wok heat oil dry the chili for one minute add the mustard seeds drained cashew nuts and curry leaves and fry for 30 seconds. 
Add lemon juice and add the rice and mix it all together but carefully not to break the rice. Sprinkle some freshly grated coconut if you like and serve. Cashew nut rice is ready to serve.
