Catching Up

By Girl Stuck In A Rut (Visit website)

Hi friends! Sorry for dropping off the face of blogosphere! It seems the more I plan and goal set to be more accountable the less accountable I become :(

As usual it's been a crazy hectic week/weekend. The last 5 days have been busy with appointments, dog grooming, a friends b-day (I spent all of Friday with her), helping my SIL pick up and deliver a new table she bought, seeing her new digs, and of course Mother's Day! I feel like I have barely been home!

For Mother's Day we bought a hanging planter, organic soil, a strawberry plant and a pretty butterfly to put in the planter and brought it to my mom's to surprise her. She can grow them all summer and they will grow again next year too. Hubby put it all together for her and it's ready to go. The plant already had a few berries on it- bonus! We also took my mom out to Montana's for lunch. I had the veggie feta burger and sweet potato fries.

Last night I was going to do a blog catch up, but while looking through tattoo designs (more on that soon) I managed to catch something and shut down the computer! It took hubby 2hrs to figure it out, get it off and bring everything back. Oops!!! I felt bad to do that on a Sunday night to him.

On the eating front it's been hit and miss. I've had lots of great meals, a few bad, and a few too many treats.

I joined Ashley's 52 days till summer challenge and I'm getting back on track today! The only good thing I stuck to is walking.

I have too many food pictures to post but here is some recent eats from the past week:

Fruit, yogurt, oats, flax seed, pecans.

Wheat berry & Cauliflower salad from Tosca Reno's Eat Clean cookbook. I won't repeat the recipe as I found it here as well. YUM!

Egg and cheese waffle sammie.

I took my friend for sushi for her b-day. We shared this Agedashi tofu dish...

along with these; yam tempura roll, caterpillar roll, dynamite roll and cucumber avocado roll. It was a fabulous lunch.

My friend is 4mths pregnant so I made homemade P.B. Sundrop cookies with natural ingredients for those cravings she has. I also made her dark chocolate macaroons. I ate some too though. Too good for me to have in the house!

This is a Wheat Berry Tabbouleh salad from Canadian Living.

Snacks involved lots of hummus. I have 2 of these sized containers to use up...so be warned you will see it often ;)

Well I have to run up to the grocery store for some supplies. I have a full week of cooking ahead of me starting tomorrow. The weather is supposed to be beautiful this week so I plan to take the dogs everyday.

Hope you had a fabulous Mother's Day weekend and that your week is off to a good start. See ya tomorrow!
