Chef John Besh

Good Evening!

We have had a very fun day doing pretty much everything we love, eating, meeting famous chefs and cooking.  We had the pleasure of meeting Chef John Besh and his lovely wife today at the Book People book signing.  My son Emmet is a huge John Besh fan and actually shed a tear when he did not beat out Michael Simon for The Next Iron Chef America spot.   So he was thrilled to be able to shake his hand and take a picture with him today.  Chef Besh even invited Emmet to his restaurant La Provence to hang out with his 4 boys on his local farm.  Emmet is now asking us how soon can we go to New Orleans.  Mr. Besh is extremely charming and spent about half an hour talking about his "baby."  The cookbook entitled My New Orleans took 5 years to write and shoot and it really is quite a beautiful book and you can tell he put his heart into this book.  I can't wait to sit down and read this cookbook.




One thing that I really loved was how he described his love/hate relationship with New Orleans and that is my exact sentiment.  I too have a love/hate relationship with New Orleans much to the chagrin of my husband who would love to move back home.  Even John Besh asked us when we are moving back with which I had to laugh.  In my dream world it would be fabulous to be friends with John and his wife and our kids could play together and we could break bread and hang out.  Right... I doubt that is going to happen but it is a fun thought.

So being the foodie geeks that we are we promptly found a couple of recipes out of his cookbook and went to Whole Foods to pick up the supplies after the book signing.  More to come on this but first I have to say I have eaten quite well today. 

It all started off with a cup of french press coffee and Boston Brown Bread French Toast with Almond Butter, Raspberry Preserves and Fresh Berries.  Wow!  This was so amazing.  The combination of flavors was outstanding and I would highly recommend giving this a try.

Boston Brown Bread French Toast with Almond Butter, Raspberry Preserves and Fresh Berries
1 thick slice of Boston Brown Bread
1 egg
1 tsp vanilla
dash of cinnamon

Combine the egg, vanilla and cinnamon and whip together.  Dip the slice of bread into the egg batter and then cook it over medium high heat in a non-stick skillet.  Cook 1-2 minutes per side and then remove from heat. 

Top with:

1 tbsp almond butter
1/2 tbsp Bonne Maman Raspberry Preserves
Fresh Raspberries and Blackberries
1 tbsp sliced almonds


  Absolutely Delish!

After church we headed straight to Whole Foods for lunch and I hit the salad bar and put all sorts of goodies in it:  Quinoa, Beets, Radishes, Detox Salad Mix, Pepitas.





Emmet also wanted Sushi and he shared a few pieces with me- Yum.  I love the Salmon and Tuna with spicy Wasabi.


 
 
Now if that was not enough good eats for the day it only gets better.  My husband made the most amazing Trout Amandine from John Besh's new cookbook.  This was truly restaurant style good.  I honestly have to say it was one of the best fish dishes I have ever had and I generally order fish when I dine out at nice restaurants.



The fish is lightly dredged in flour before pan frying and then is served with a brown butter lemon almond sauce.  Esquisite.

We served the fish with a side of Roasted Brussels Sprouts and Brown Rice for the kids.





Now again you would think this would be enough great eats for the day but I am not one to miss out on dessert and you know that Whole Foods has fabulous desserts so I picked up.....

A Boston Cream Pie Cupcake!



I started the day off with Boston Brown Bread and ended the evening with a Boston Cream Pie Cupcake.  Now I must admit that this was good but it did not hold a candle to the Boston Cream Pie that I made.  The ganache was of course out of this world but the rest of the cupcake was just ho-hum.  I can't wait to make my Double Decker Boston Cream Pie later this week.  It is going to be so much fun.  I love to bake.  It really is one of my favorite things to do and I will have an opportunity to bake for Teacher Appreciation and my sister's b-day so I am excited.  

Well it is time to read to the kids and get ready to settle in to watch Brothers & Sisters.  I hope you all had a great Sunday as well and I look forward to checking in tomorrow morning!
