Chembu Curry
Taro in creamy coconut sauce Ingredients :-Chembu /Taro - 250 gm Grated coconut - 1 cup Green chilies chopped - 3-4 Garlic chopped - 1 Small onion/onion chopped - 1 Turmeric powder - 1/4 tsp Tamarind pulp - 1 tsp Mustard seeds Dried red chiles-2 curry leaves Salt to taste Oil Dissolve tamarind pulp in 1/4 cup water . Clean and cut the Chembu/taro into medium pieces. Cook it with, 1 cup water, salt, and green chiles until done. Add more water if necessary and cook it till all the water is evaporated.Grind grated cooconut, turmeric powder and chopped garlic to a smooth paste adding very little water. Heat oil in a pan and add mustard seeds . when they pop up add curry leaves, dried red chillies and chopped onion. Saute till soft and add cooked taro/chembu pieces and stir in the coconut paste. Pour the tamarind water and simmer it for 5-6 minutes, or until it is well blended and sauce is thick. Serve warm Cheers!!!! related searches : Chembu
