CHEWY LEMON SUGAR COOKIES
A mini-miracle has happened at our house...hubby has found a cookie he likes as much as peanut butter cookies!! I'm not sure what to think about this since I've been making peanut butter cookies so long that I can make them in my sleep. Needless to say, I'm thrilled to find a new recipe that hubby gives two thumbs up to. Our dog, Chloe, is in love with these cookies too...she sits at hubbies feet and looks at him with pleading eyes until he gives her a piece.
I made these cookies three days ago and they are still chewy (not cake-y). I wanted to put a pretty yellow frosting on them (for the photograph) but hubby put the nix on frosting, he said they are perfect without it. 3/4 cup butter (room temperature)1 cup white sugar 1 egg 2 tablespoons corn syrup (important) 1 teaspoon lemon extract (I used 2 teaspoons) 2 cups all purpose flour 1 teaspoon baking soda 1 teaspoon baking powder 1/2 cup of white sugar (to roll cookies in) In a medium bowl, cream together butter and 1 cup of sugar until it is very light and fluffy (takes a few minutes at high speed). Beat in egg, corn syrup, and extract. Add flour, baking soda and baking powder and mix well. Roll dough into 1" balls and roll the balls in granulated sugar and chill the balls in the fridge for about 20 minutes while the oven pre-heats. Place the chilled cookie balls on a parchment lined cookie pan (about 2-3 inches apart). Bake in preheated 325 oven (see note) for 12 minutes or until they barely turn golden around the edges. NOTE: These cookies had a mellow, but distinct lemon flavor. If you like "ka-pow lemon", I would increase the lemon extract to 3 teaspoons. You COULD add lemon zest, but that will super activate the baking soda and you will get a cake-y cookie, not a chewy cookie (does that make sense?). NOTE: The original recipe was found on Allrecipes.Com but I tweaked it a little. NOTE: Recipe calls for baking these at 325 which didn't work very well. I baked them at 350 and they baked perfectly in 12 minutes. related searches : Chewy
