Chicken-Bacon-Tofu Balls and Potato- Sausage-Brocolli Salad
Couldn't find my way to sleep last night, I don't know what to blame.. the coffee.. the bittersweet chocolate.. both.. or me..It was hard to get up early.. bussiest and laziest day of the week for me.. and it's today.. Monday..but it was a yummy Monday. It took me an hour to prepare our lunch, and it's all worth it. As I've mentioned on my previous post that I'd make more recipes with tofu, really can't get enough of it. Hubby was also excited for these one, and when I asked him what should we buy for our weekly menu, he'd say.. tofu.. and asked him again he'll give me the same answer.. And so here it is.. Long name for the recipe.. don't know what to call it so I used the main ingredients. Ingredients: Chicken-Tofu Balls 400g chicken breast, chopped finely (until it looks ground) 100g firm tofu (mashed using fork) 3 piece of bacon, chopped finely 1/2 cup bread crumbs 1 egg flour salt (depending on your taste) ground pepper oil for frying Procedure: 1. In a bowl, combine chicken, tofu, bacon, bread crumbs, egg, salt and pepper 2. scoop a spoonful of mixture and turn it into balls while rolling it in flour.. what i did? I powdered the chopping board with flour, drop the spoonful of mixture, roll it over the flour while my other hand is sprinkling more flour on it until it's fully covered..you can make 20-25 balls.. 3. fry using oil, turning on all sides until golden brown..serve with ketchup.. Ingredients: Potato-Brocolli Salad 2 potatoes, peeled and chopped broccoli florets , 8 to 10 pcs 1 egg 2 sausage, sliced -- I used Japanese sausage or you can use Frankfurter 2 cups water for boiling salt pepper Procedure: 1. In a boiling water, add potato and sausage 2. When potato is tender add egg with shell.. after a minute add brocolli 3. remove broccoli when it's cooked, and that is after a minute or so.. and transfer to a bowl (just to make sure it's not overcooked) 4. cover the pan with potato,sausage and egg for about 3 minutes 5. then, remove egg (almost cooked but not, yeah halfway done), beat it in separate bowl 6. remove the remaining water from the pan, mashed the potato, add the beaten half- cooked egg, mix thoroughly with sausage..(don't mash the sausage!) Set the pan in low heat and stir the mashed potato-sausage-egg for a minute..then add broccoli, mix them together..carefully.. to retain the beauty of broccoli florets..serve hot with ground pepper on top..
