Chicken Curry with Rice and Udon Noodles
I wanted to use up all my random bits of vegetables today. The potatoes and ladies fingers were going off soon, so I thought I could make chicken curry since I had chicken fillet in the freezer too. Curry is always easy to make if you have a good paste or sauce, you just have to cut and put everything in a pot and simmer for 30min to 1 hour depending on what meat you use, with or without bones etc. After work I went to the supermarket and got some carrots and celery to bulk up my dish. I have something for celery especially with curry. I can?t seem to have any curry without celery, the taste just wouldn?t be complete without it. Weird eh? Anyone like me?
It?s hard to find proper curry powder here in England, so I used the golden curry cubes (Japanese brand) for my curry sauce. I added some dried curry leaves, and fresh chilli to spice it up a little, it tasted so good with the curry leaves. I made a big pot enough to last me for 3 meals, great isn?t it? That portion in the picture may last for a week for some people but for me, I can finish it in 2 or 3 meals! Don?t be surprised with my big appetite I had my curry with Udon noodles instead of rice the next day. Then for dinner I had egg fried rice with the final portion of curry. Don’t we all like to mix and match our food so that we don?t get bored with eating the same stuff every day? It actually does make a difference, the food taste better too. Don?t we all do the same?
