Chicken, not turkey
We're watching National Lampoon's Vacation ("is that real tomato ketchup Eddie?") and not eating leftovers. We don't have any. I made sure they were all taken away when everyone left. DS actually complained that we didn't have any. hmm.
Of course that means I have to cook new, different food. And cook, I did. DDH now is suffering from the virus that has kept me down for over a week. I apparently shared it with him cause I'm generous like that. Sorry honey. Didn't mean to. Anyway, I made a pot of chicken tortilla soup cause what is better for what ails you than soup and who doesn't like chicken soup when they're feeling puny and tortillas make the world go round. This recipe comes from a friend who got it from Whole Foods a long time ago. It's really good and loaded with all kinds of good things. Low calorie and low fat. And just so yum-O! I've made it many, many times through the years. The list of ingredients looks long but if you get everything chopped and measured ahead of time it goes pretty quick. Did you know that if you burn a candle while you chop onions, you won't cry? yeah. for real. Try it next time. Tortilla Soup 1/8 cup canola oil (I use about 2 TBL olive oil) 1 med. red pepper, seeded and chopped 1 med. green pepper, seeded and chopped 1 med. red onion chopped 2 cloves garlic, minced 2 tsp dried oregano 1 tsp cumin 3/4 tsp chile powder 1 jalapeno, seeded and chopped(I use green chile cause I've got a freezer full) 1 cup diced tomato 4 cups water or stock 2/3 pound boneless chicken breast 1 15-ounce can black beans, drained and rinsed 2 cups fresh or frozen corn 1/2 cup fresh cilantro, minced salt blue corn chips(or corn tortillas) avaocado monterrey jack cheese, grated Heat oil in pot over medium high heat, add green and red pepper, onion, garlic, oregano, chile powder, cumin and saute for about 3 minutes till onion is tender. Add jalapeno and tomato and water(or stock) and chicken breast and bring to boil. Reduce heat and cook uncovered for 20 minutes. Remove chicken to cool. When chicken is cool enough to handle, chop, shred or tear into peices then return to pot. Add beans and corn and bring to boil. Remove from heat and add cilantro. Ladle soup into bowl over chips (or tortillas, or nothing) Add slices of avocado and sprinkle with cheese(or not) I like to use canned diced tomatoes. Fire roasted if you can find them. Makes the soup so yum-O! Mine is more like what Rachael Ray calls "stoup". This soup is even better the next day so make plenty! related searches : Chicken
