Chicken Sausage, Sweet Onion and Fennel Pizza
3 oz chicken apple sausage, chopped 2 t olive oil 1 garlic clove, minced 1-1/2 c vertically sliced Oso Sweet or other sweet onion 1 c thinly sliced fennel bulb (about 1 small bulb) 1/4 t salt 1 (12-ounce) pre-baked pizza crust (such as Boboli Thin Crust) 3/4 c (3 ounces) shredded Gouda cheese 1 T chopped fresh chives Preheat oven to 450 degrees. Heat a large non-stick pan over medium-high heat and add oil to pan. Add onion, fennel, and salt; cover and cook 10 minutes or until tender and lightly browned, stirring occasionally. Add garlic and cook for one additional minute. Place pizza crust on baking sheet. if you are using a mix follow directions on package. However, prior to topping crust, place pizza crust in oven and cook for 3 minutes. This ensures you pizza crust will remain crispy. Skip this step for a pre-baked crust. Top evenly with onion mixture; sprinkle with cheese, and top evenly with sausage. Bake for 12 minutes or until cheese melts. Sprinkle evenly with chives. Cut pizza into 8 wedges.
