Chicken "Scallopini" with Garlic & Lemon Zest
This recipe is simple and delicious. I found it in Muscle and Fitness Hers July/Aug. 2010.
"Chicken is not only a lean protein that enhances muscle recovery but also a good source of selenium, which is critical for maintaining your metabolic rate and muscle strength." Serves 2 2 6-8oz. boneless skinless chicken breasts Kosher salt and cracked black pepper 2 garlic cloves, chopped Zest of one lemon Juice of one lemon 1 tablespoon olive oil Nonstick cooking spray On a cutting board, place a chicken breast between two sheets of plastic wrap. Use a mallet or the bottom of a saute pan to gently pound chicken to 1/2-1/4 inch. Repeat with second breast. Season chicken with salt and pepper. Cook with nonstick cooking spray and place on a grill over high heat. Grill 2-3 minutes per side. Remove chicken to a serving plate and sprinkle with garlic, lemon zest and juice, and olive oil.
