Chicken Tenders
I know wheat bran is probably nothing new to many of you. However, I just discovered it and am enjoying experimenting with it. Although I have mostly been adding it to foods here & there for extra fiber, I recently decided to try it as a breading. It is super low calorie AND low carb so it's perfect as a breading. I was afraid it would not get crispy enough with the bran alone, so I mixed it with bread crumbs. The hubster thought they were pretty good and I hope you do too!
You will need: -1/4 cup half & half -1/4 cup egg beaters -1 pound chicken tenders (sliced chicken breasts) -1/4 cup breadcrumbs -1/4 cup wheat bran -1 tablespoon flour -1/2 teaspoon garlic powder -1/2 teaspoon onion powder -1/2 teaspoon cayenne pepper -1/2 teaspoon paprika (smoked if you've got it) -1/4 teaspoon black pepper -1/4 teaspoon salt 1. Preheat oven to 375. Cover cookie sheet in aluminum foil and spray lightly with non-stick spray. 2. In a shallow bowl, mix together half & half and egg beaters. 3. In a separate shallow bowl, combine breadcrumbs, wheat bran, flour, garlic powder, onion powder, cayenne pepper, paprika, salt & pepper. 4. Dip chicken in half & half mixture, then dip in breadcrumb mixture; shake off excess. 5. Place chicken on cookie sheet and bake for 20 minutes or until juices run clear and chicken is no longer pink-turn over after 10 minutes. Be creative with how you flavor the breadcrumb mixture! Add more heat or change the spices all together-I bet dried oregano & basil would be pretty tasty too! related searches : Chicken
