Chicken with creamy spinach and shallots
It is really interesting to live with someone and to try to make sure that our habits, taste buds and what not mesh. It doesn?t always work, he?s a morning person and I?m a night owl. He hates sweet and savory combo, especially Asian. Asian is one of my favorite types of food.
Dan loves onions on everything, I?m realizing that I can take them on certain dishes but on others it doesn?t mesh. This creamed spinach is one of those dishes. Dan finished the spinach, all of it, in one sitting. I finished my portion, but had to pick out all the shallots. The chicken thigh was as delicious as usual.
Chicken with creamy spinach and shallots adapted from Real Simple
Ingredients: 2 T olive oil 8 chicken thighs 4 shallots 1/4 c dry white wine 1/4 c sour cream 8 c spinach Instructions heat a large skillet over medium high heat and add the oil. Sprinkle salt and pepper over the chicken. Cook for about 8 minutes per side.
Remove all but 1 T of fat and add the shallots to the pan and cook for 2-3 minutes. Add the wine sour cream, spinach, salt and pepper. Cook for 1-2 minutes or until the spinach is wilted. Nutritionals (Serves 4) Cals: 289, Fat: 15, Carb: 3, Fiber: 1.3, Protein: 30
