Chili Mac, Christmas King Cake and more....
Good Evening! It has been a fun day of baking and getting geared up for our last week of school. Zoe and I took the day off from church and spent the day listening to Christmas songs, baking 5 King Cakes, dozens of batches of Cranberry, Apricot, Pistachio Biscotti, addressing Christmas Cards and getting my gifts ready to give out for teachers and clients. It has been a productive but long day and it was actually a perfect day to do this because I have got a bit of a cold (nothing major) just the sniffles and sneezes but it was a good enough excuse to play hooky from church. So I have to share a couple of chili recipes with you. The first one is Texas Chili served over Spaghetti. Texas Chili served over Spaghetti 2 tablespoons olive oil1 pack lean ground beef, 1 cup chopped onion 3 jalapeno chiles, halved, seeded and finely, chopped 2 cloves garlic, finely chopped 1/4 cup chili powder 1 tablespoon ground cumin 1/2 teaspoon salt 1/2 teaspoon ground red pepper (cayenne) 1 can (14-1/2 ounces each) stewed tomatoes2 tbsp tomato paste 1 bottle (12 ounces) beer 1 bay leaf Serve over cooked spaghetti and top with Cheese, Onions, Greek Yogurt and Fritos 1 pgk Barilla Plus spaghetti, cooked according to directions. Heat oil in a Dutch oven over medium-high heat. Working in batches, saute brisket until browned, about 10 minutes. Transfer to a plate. Add onion, jalapenos and garlic to drippings in pot; cook over medium-low heat until onion is very tender, about 8 minutes. Stir in chili powder, cumin, salt, and red pepper; cook 1 minute. Return meat to pot. Stir in broth, tomatoes, beer and bay leaf. Heat to boiling. Lower heat; simmer with cover slightly ajar until meat is tender, about 1-1/2 hours. For last 20 minutes, uncover to thicken chili. I made a wonderful Chicken, White Bean Chili that was awesome as well that I found on the Eating Well website. White Bean and Chicken Chili Ingredients1 tablespoon canola oil1 1/2 cups chopped onion2 4-ounce cans chopped green chiles1 teaspoon dried oregano1 teaspoon ground cumin1/8-1/4 teaspoon cayenne pepper3 15-ounce cans great northern beans, rinsed4 cups reduced-sodium chicken broth4 cups diced cooked chicken2 tablespoons cider vinegarPreparationHeat oil in a large pot or Dutch oven over medium-high heat. Add onion; cook, stirring occasionally, until softened, about 5 minutes. Stir in chiles, oregano, cumin and cayenne. Cook, stirring occasionally, for 5 minutes. Stir in beans and broth; bring to a simmer. Cook, stirring occasionally, for 20 minutes. Add chicken and vinegar; cook for 5 minutes more. Serve.I had another bowl today and I think it was even better to day. Yum! Our weekend has been fun and we made a trip down to Whole Foods for little dinner on Saturday. We were doing a little Christmas shopping at Book People as well. I love Whole Foods, the whole family gets to eat what they want and everyone is happy. I got a wonderful salad at the Salad Bar. ![]() Zoe got Pizza. She thinks Whole Foods make the best pizza ever! ![]() Emmet got BBQ. Austin's Whole Foods is the Headquarters and it is really the the best Whole Foods! I picked up a fabulous loaf of Muesli Bread which made for a great breakfast. I had one slice with a tablespoon of Fage 0% Greek Yogurt, a drizzle of honey and a sprinkling of pistachios and the other slice with a little Sun Flower Butter and Maple Pumpkin Butter. Wow. I am giving each of my clients these cute water bottles that I found along with a serving of guilt-free Cranberry, Apricot, Pistachio Biscotti. Zoe was my little elf today and had fun tying all the ribbons and helping make Christmas King Cakes. We knocked out 5 Christmas King Cakes today! The finished product. Now I just need to write my book on How to Have Your King Cake and Eat it Too and then I will be in business! I am officially taking over Baby Boot Camp starting in January and am seeking any help with a clever name. Some of the names have been Baby Option Boot Camp, Power Hour, Bliss Boot Camp..... I am welcoming any ideas. The boot camp will be 5 days a week and everyone is welcome. Men, women, children. We have a great group of ladies that come and the best part is that it is a mix of mother's with newborns, mother's with older children and single women. Husbands sometimes pick up a class here or there as well. Something to ponder anyway. I am off to make a cup of tea and get the kiddos and myself to bed.
