Chips and Cookies.
First of all, thank you all for the supportive comments regarding my current lack of interest in food. I decided to kick myself in the butt today and make myself get back in the kitchen! I have made a couple of yummy dinners in the meantime though.
First up, dinner the other night I decided to try Lolo's Candied Lime Sweet Potatoes. These were a big hit with both Mr UnVeg and myself (I'm not surprised, sugar for dinner? Yum!) I've never really thought to eat sweet potatoes .....well sweetly, I usually have them savoury. They were really good though! Next time I'd like to put the ginger in but Mr UnVeg doesn't like ginger. I served them up with some of Tami's Sausages and steamed Broccolini. I revisited baked potatoes. Nothing too special. I did discover that Tami's Sausages (yes, these are totally the best thing since sliced bread!) make really good seitan bacon. I've made a couple of versions of them. I add HEAPS of smoked paprika to them now. I marinaded them in the marinade from Vegan with a Vengeance using 2 Tbsp of Maple Syrup instead of the Cider Vinegar the recipe calls for. Today while butt kicking I decided to try making some Silverbeet (Swiss Chard) Chips. I can't get my hands on Kale so decided to try the next best thing. These were amazing and I who is a self confessed Spinach and Silverbeet HATER (her emphasis) LOVED these! (Woo Hoo!). They do burn very quickly so be careful (I used the benchtop oven where I could see them cooking) and they don't keep very well. Eat them fast to prevent sogginess.Simply toss 1/2 bunch of Silverbeet (stemmed, washed, dried and cut into bite sized pieces) with 1 tsp or so of Olive Oil and sprinkle with Salt. Bake at 180C for 8-10 minutes or until browning and crispy, on a parchment lined baking sheet. Try not to eat the whole bowl at once :P Excuse the hair on the lens, I promise, that one was on the lens (although they're usually in my food and I never notice them until long after I've eaten that food!)And finally one for Mr UnVeg who complained I hadn't cooked cookies in ages. Chewy Chocolate Choc Chip Cookies. I threw in a teeny bit of white choc chips that were fast approaching their useby date (shhh, don't tell anyone I un~veganized a vegan recipe! I swear, I usually don't!)
