Chocolate Cannelloni, Laundry and a Slightly Inadequate Snowstorm

Hello... have you met my pile of laundry? Will you look at that?! It's unbelievable.



It just won't stop piling up! I've done 6 loads the whole week, and the pile just keeps growing and growing. But have no fear.... I have come up with a guh-rrreat solution! I told my husband that he should consider using just one pair of socks and underwear each in a week! That should bring the pile down considerably. The feedback? Negative, so far. But trust me, I am working on it :)



My oven is still kaput. It seems that some part of the insulation what-not "fell off" and needs to be replaced. The landlord came by and put a little magnet-thing to temporarily replace the insultation what-not until Tuesday, when a proper fix-it man comes in to fix it. Although it does work and it has since stopped coughing up smoke, I've been told to be careful not to juggle the body too much in case it shakes the magnet-thing off. So I've chosen to stay away for the more obvious reasons. As much as I love my landlord, I would like to wait for the proper fix-it man to fix it. *Oh Handy Maaaaaaaa-ny!!*



A huge part of my winter-spring-cleaning project, is the kitchen. I swear, the kitchen must be craziest place in the house - immediately after the children's toy basket! And like a little treasure hunt, I found a box of Cannelloni that I haven't used in ages. I think it may have gone house-hopping with me. I'm not too sure. So I thought I'd use it up today! It was perfect for shaping pastry.



And so begins my saga over the stove. Although standing over a hot stove is not entirely appealing to me on most days, with today's somehwat inadequate, but freaky enough, snowstorm (?), I welcomed the heat.



Just a little while later, I found Daniela sneaking into the fridge for another piece!!



Gotcha!!



So if my number taste-tester had tried to sneak another piece from the fridge... I'd say it must be good then?



Chocolate Cannelloni

1 Teaspoon Instant Coffee
1 Teaspoon Cocoa Powder
1 Tablespoon Caster Sugar
30g Butter, Chopped
Pinch of Salt
125g AP Flour
70ml Water

125g Cream Cheese
100g Icing Sugar
15g Dark Chocolate, Shaved

Icing Sugar for Dusting
6 Cannelloni Tubes for shaping


In a mixing bowl, sift the coffee, cocoa, sugar, salt and flour with a fork. Add the butter, and using a pastry blender, combine dry mixture until it resembles coarse breadcrumbs. Working slowly, add a little bit of water at a time to form a soft dough. You may not have to use all the water. Gently knead the dough until it comes off the sides of the bowl.

Take a sheet of baking paper and lay the dough in the center, topping it with another sheet of baking paper. Roll the dough into a rectangle, about 3mm thick. The thinner, the better. Cut it into 6 equal squares. Place Cannelloni tube diagonally across each dough square and fold it over to overlap in the middle.

Heat about 2 inches deep of oil in a small saucepan, and fry the pastry until crisp. Set aside to cool.

Meanwhile, beat the cream cheese and icing sugar together until smooth. Gently fold in the chocolate shavings and chill until set.

Slide off the Cannelloni tubes and fill each pastry with the cream cheese filling. Dust with icing sugar before serving.
