Chocolate Chip Cookie Drops for A Week's Fraction of the Early On-set of My Mid-life Crisis
So... I think I just experienced a week's fraction of the early on-set of my mid-life crisis. Is it possible? It's insane. Really. I can't seem to point my finger on any one thing in particular that has set me off. It just seems to be a lot of everything and nothing. And it doesn't help that I am idealistically trying to raise my young family in a time of worldwide recession and a swine flu pandemic, just months after uprooting them to move half way around the world! *I'm scared!!* I have been nursing what to me, seems like very real fears, while others brush them off with a shrug of their shoulders. Nursing a fear is terrible. I don't mean to nurse it *I have a nursing nature, which I once thought was a good thing!!*... but it's there. . Real, but unreal. Almost tangible, but not quite. My days have since gone on with a get-by attitude. How else? I don't know how to protect my children from all this. Work. Work hard. Sanitizers. Dehumidifiers. It all seems like futile attempts that will lead no where. How can I not worry? Look at her.... Amidst all this, I have pathetically succumbed to the comfort I have found in cold toast and butter. See? Pathetic. I have begged my Kitchen not to begrudge me for this self-imposed sabbatical. *sigh* I don't think it's working. I made a batch of cookies, which have promised to be the best cookies ever. But my taste buds were not pleased. They were good, but they weren't that good. Weeeelll.... okay. I take it back. They were good. Mmmm... I think I'm gonna go and have me another piece. If the swine flu hits hard then at least I'll have had a yummy cookie. *Please go away, Swine Flu! Shoo! Please end now World Wide Recession. End now!* And so begins my quest for the best cookie recipe. Anyone? anyone? :) Little Chocolate Chip Cookie Drops 2 Cups + 2Tablespoons AP Flour 1/2 Teaspoon Salt 1/2 Teaspoon Baking Soda 12 Tablespoons (170g) Butter, Softened 1/3 Cup Brown Sugar 1 Whole Egg 1 Egg Yolk 2 Teaspoons Vanilla Essence 1 1/2 Cups Dark Chocolate Chips Pre-heat the oven to 170 degrees C and line a cookie tray with baking paper. In a medium bowl, sift the flour, salt and baking soda. In a separate bowl, beat the butter and sugar, until a smooth consistency is reached. Mix in the egg and the single egg yolk. Add the vanilla. Fold in the flour mixture until just combined. Fold in the chocolate chips. Drop teaspoons full into the prepared cookie sheet, about 2 inches apart. Do not shape the cookie dough, so that it bakes into that nice freshly baked bakeshop look! Bake until the cookies are slightly golden, brownish on the edges but soft and puffy in the center for 8-10minutes. Transfer to a cooling rack. Serve warm... or store it in an air tight container for up to 5 days. related searches : Chocolate
