Time for a sweet dessert. Coconut is my favourite. Back home in Malaysia we use a lot of coconut in our cooking and desserts, like Best Coconut RollsPopular Malaysian Dessert (Bubur Cha Cha)9 Layered Coffee Rice Pudding and Condensed Milk Tapioca Cake, to name a few. We use it a lot in our curries, too. Freshly grated coconut is easily available. Nothing beats that. It gives awesome flavour, no matter what you cook.



But over here, I have to depend on canned coconut milk and packet desiccated coconut. It’s quite disappointing but at least there’s something rather than nothing. Recently I saw fresh coconut at a supermarket. They were small. Nevertheless I was happy and bought 2. I tried to extract the cream but very disappointed to say that there was very little cream, so I gave up.


Besides coconut, chocolate makes great desserts. We all know that. So, combining these 2, this dessert is one of my favourites. The chocolate topping makes it really delicious when you bite into it. However I find the coconut base a little too dry. If I make this again I think I will add half a cup of coconut cream to Ingredients B for a more moist base and flavour.


This recipe is very simple and easy and great for any parties….just melt, mix and bake. There’s little washing to do too.


Ingredients A

1C flour

1T cocoa

1/2C sugar

1C desiccated coconut


Dry ingredients

Dry ingredients


Mix Ingredients A in a mixing bowl.


Ingredients B

185g butter (melted)

1t vanilla


Ready to be baked

Mix Ingredients B and pour into the dry ingredients above. Mix well and press into a paper-lined tin and bake at 180 degrees Celsius for about 20 minutes or check with a skewer. It’s cooked when a skewer inserted into the centre comes out clean. Remove from the oven



Ingrdients C (topping)


200g dark chocolate

60g butter


Melt together in a pot under low fire. Pour over the chocolate base above and let cool. Chill until set before cutting.
