Chocolate Lava Cake!

I've been so craving chocolate recently and then i remembered I'd seen a blog post about Chocolate Lava Cake! I had forgotten all about this French classic, so i made it!

I've always found this recipe to be really simple to make and im hoping to make it when we have some guests over for dinner. I'm sure it would impress.

I didn't have anything to accompany the chocolate goodness, but i don't think it mattered, it was delicious. If i do make it for guests, i will have some fresh summer berries and a little ice cream to go with it! I made these with rice flour so a bonus is that they're wheat free!

Ingredients
6 oz. Semi-Sweet Baking Chocolate (or use your favorite 70% dark chocolate bar)
6 oz. Butter (diced, room temperature)
3 Eggs
1/2 cup Granulated Sugar
1/3 cup brown rice Flour
Butter and dust 5 Ramekins



Method

Preheat oven to 350°F
1. Melt chocolate on low flame in a bain-marie (double boiler). When melted, take off flame
2. Stir in diced butter, until it melts.
3. In another bowl, beat eggs and sugar, until it starts to whiten.
4. Stir in melted chocolate and then the flour.
5. Butter and dust 5 individual ramekins, and pour in chocolate batter.
6. Cook for about 10 minutes.
7. Tip ramekins upside down onto dessert plates and serve.



In terms of baking time? well, it depends on how runny you want it. For this, you want the top to be cooked through, but the center to be liquid. You can check with a toothpick after 10 minutes of baking. I didn't want it too liquid because i didn't want to have a house covered in brown smears (thanks to the child!)!
