Chocolate Minty Sandwich Cookies

This cookie was in an earlier post for Cookie Party Platters.  This was a big hit and everyone at the party wanted the recipe.  So, here it is!


Recipe: 
preheat oven to 350 degrees
2 cookie sheets lined with silpat


1 cup unsalted room temperature butter
1 cup granuated sugar
1 large egg
1 tsp. baking powder
1 tsp. pure vanilla
1/4 tsp. peppermint extract
a few drops of green food coloring
3 cups all purpose flour, plus extra for rolling


8 oz. or more;  Melted dark chocolate candy melts (mint flavor) or use dark chocolate with chocolate mint flavoring extract (extract must be made specifically for chocolate), temper your chocolate. 
Other option: use regular dark chocolate candy melts and increase the peppemint extract in dough recipe.


I used candy melts because it saves me time in tempering chocolate. You do not have to temper candy melts, just melt and use.  I had made four batches of these cookies plus many others and candy melts are a time saver.  Make sure you get the mint flavor melts or you will have to add mint extract specifically made for chocolate.  You cannot use the same one for baking.  The chocolate will seize.


Cream butter and sugar until lighter in color.  Add egg and continue to beat.  Sift all dry ingredients together.  Add extracts and food coloring.  There is no salt in this recipe.  Slowly add flour until well mixed, but do not over mix.  You will have a tougher dough. 


Cover with plastic wrap and cool in fridge for 20 minutes. 


Add flour to work surface, divide dough in half and roll out to 1/8 inch.  Use a round cookie cutter.  I also cut half the cookies with a little leaf cutter in the center, so chocolate could peek through.  Bake for 8 to 10 minutes until lightly colored.  Cool completely. 


Melt chocolate and take the bottom underside of one cookie, with spatula smear a thin coating of mint chocolate and attach the other cookie with leaf cut out and sandwich together.  I then rolled the sides of the cookie in more chocolate.  Put on an icing rack to harden.? Sprinkle with powder sugar and I also sprinkled with sugar glitter for a little sparkle.
