Clean Menu- Sunday, March 28, 2010
This morning I did laundry and starting to prep for the bar exam. My study course opened some pre-study videos, outlines, and assessments this past week, so I'm trying to work through them. It's a bit overwhelming to try to fit it in among all my other school work, so I'm not sure just how much of the pre-study that I'm going to get through.
I'm also working on my menu-labeling paper. I'm not feeling real motivated at this point though, but I'd rather get it out of the way and complete it than be focusing on it during finals. My other plans for the day include some cooking. I am going to make our breakfast grains for the week. I think this week I will make steel cut oats for both of us. I'm thinking of adding strawberries as they're cooking and then each day adding my banana. I also bought kale last night to make kale chips, something I've never had before. And I want to make a polenta for use in a recipe I'm making later in the week. It'll save me some time later on. For breakfast, I had a big latte and some oatmeal with peanut butter and a banana. I realized this morning that a huge key to feeling satisfied is adding the peanut butter. Yesterday, I ate the same thing sans peanut butter and I was starving by lunch time and I'd had a smoothie before that. Today, less the smoothie, I was full for much longer. I will make the nut butter more of a staple in it. For lunch, I made John and I some omelets. For John's, I used two whole eggs, but for mine, I used two egg whites and 1 whole egg. I included some sauteed peppers and onions (finally used the rest of these!) and an ounce of mozzarella in each. Very tasty! Here is John's. And here is mine. To be clear, they are on two different size plates. For some reason that's what I pulled out of the cabinet. Mine isn't gigantic! If I'm hungry this afternoon, I will snack on some baby carrots and fresh pineapple. Our planned dinner is a taco salad with homemade refried beans mixed with ground turkey, sweet pepper salsa and a dollop or two of greek yogurt. I will post my recipe for refried beans, along with pictures of dinner, tonight. For an after-dinner snack, I think I'll make some air-popped popcorn- maybe kettlecorn style with some maple syrup drizzled over with a bit of salt. Perfect to munch during Amazing Race. As I type this I remember that I was able to find frozen cherries this week. I will probably have some of those as well. I don't think I can resist them! related searches : Clean
