Coconut Curried Cauliflower on Sweet Brown rice and Quinoa
I'm actually eating this while I'm typing. Its SO good. I've never really cooked with coconut milk before, but last night I made this with tofu and it was awesome. You can add tofu to it, I just didn't have any today. You can also add more or less seasoning... I like my food very loud. lol Ingredients 1/2 Cauliflower 1 Carrot 2 pieces of Kale thinly sliced 1/2 block extra firm tofu (optional) 1/2 onion, diced Whatever other veggies you want 1/2 cup coconut milk 1/4 cup shredded coconut (or a little less) 1/4 cup seasame seeds (or a little less)
2 tbsp fresh ginger shredded 1 tbsp fresh turmeric shredded fresh garlic (I used 3 cloves) 1 tbsp Cayenne dash of cumin 2 tbsp curry 2 tsp cardamon 2 tbsp Bragg's liquid amino's salt and pepper to taste What to do In a pan saute the garlic, onions, ginger, turmeric, coconut milk, and spices. Then add all the veggies. Cook on high heat. I mixed quinoa and sweet brown rice together, they cook with the same amount of water, and served it with the curried veggies.
