Ingredients: 1 small onion, chopped 8 sprigs parsley, chopped 2 cups boiled potatoes, cubed fine 2 hardboiled eggs, chopped 3 tablespoons butter, melted 1/2 teaspoon salt 1/8 teaspoon pepper 1 pound cooked cod, cut coarse Directions: Mix all ingredients together. Chill for 1 hour. Shape into round, flat cakes, using about 1/3 cup for each cake. Coat with seasoned bread crumbs. Fry in vegetable oil. Makes 9 to 10 (3-inch) cakes. related searches : Codfish
