Coffee Pumpkin Brownies W/Greek Yogurt

Are you having a chocolate fix right now?  Well no worries- I can take care of that!


A few weeks back I entered my brownie recipe in the fourth round of the Chef2Chef.net recipe challenge.  It was around Thanksgiving, so decided pumpkin was definitely needed in this recipe.  Then right before I was going to be making the recipe, I was fulfilling MY coffee fix at Starbucks.  They have those VIA on-the-go coffee packets, there was a new flavor this year, cinnamon spice.  So my mind started thinking….coffee…. pumpkin…chocolate…YES!  But wait…something is missing….one more ingredient was needed to wrap this little piece of heaven all into one…


Oh yes, Chobani Greek yogurt!!


This recipe is one of eleven recipes I have created with Chobani Greek Yogurt.  And of course as you already know, I am well on my way to 52 delicious recipes all with Greek yogurt.  Here is my last blog “My Chobani Christmas song”, with all eleven dishes.


Here are the ingredients I used in the recipe:



The recipe for this little piece of heaven:


Preheat oven to 350   Prep ? Easy   Cook time ? 35-40 minutes    Servings ? 15-20


1 cup safflower oil or canola oil


¼ cup cocoa powder


1 VIA Starbucks on-the-go Cinnamon Spice coffee


½ cup Chobani Greek yogurt


½ cup pumpkin (canned or fresh)


2 cups pure cane sugar


1 ½ cups flour


½ tsp salt


2 tsp vanilla



Optional ? Frosting


1 cup milk


1 cup pumpkin


3 cups milk chocolate chips


½ tsp vanilla


4 heaping Tbsp brown sugar



Spray 9×13 inch pan with olive oil cooking spray.


Mix oil, cocoa, Starbucks VIA, Greek yogurt, pumpkin, Sugar, together till smooth.


Slowly mix in flour, salt and vanilla.



Pour mixture in greased pan, spread out evenly.  Take small amount of pumpkin and swirl on top of batter.


Optional Frosting:


In small pot, warm up milk, then add pumpkin and mix well, add chocolate and let melt, and mix well, add in brown sugar and vanilla.  Let cook on medium heat until it thickens.  Poke holes in brownies, next put frosting on, this frosting doesn?t harden so enjoy right away!
