So, it's that time of year...final exams! Every college student has experienced those late night library hours, the much needed coffee runs, and the late night cram food. This past week, I have been in the library almost every night with my pile of notes and textbooks sprawled across the study table. Papers, study guides, and exam packets have absorbed my sleep for the past 78 hours and its killing me. This post is all about the college cram food, but I had to make it quick & easy and somewhat nutritious to keep those brain juices flowing. Enjoy!

1) First Up...Breakfast

One-Minute Omelet Meal

Ingredients:
1 egg, Canadian bacon, 2 slices of bread, and omelet toppings of your choice.

Directions:
Stir egg with your choice of omelet ingredients, coat a plate with non-stick cooking spray. Pour in the mixture on the plate and microwave for 1 minute.

2) Next...Lunch

BLT Wraps

Ingredients:
1 lb. bacon (fried and torn into small pieces), 1 head lettuce (shredded), 2 to 3 tomatoes (chopped), salt and pepper to taste, whole wheat tortilla

Directions:
Place bacon, lettuce, and tomatoe in large bowl,salt and pepper to taste, place ingredients into the tortilla wrap and wrap like taco. Makes 6 to 8 servings.

3) Then there is...Dinner

Cranberry Apple Chicken

Ingredients:
2 chicken breasts, 1 granny smith apple, 1 can whole cranberry sauce.

Directions:
Preheat oven to 375 degrees. Core and dice apple, put apple into a bowl. Pour cranberry sauce into bowl with apples bits, mix well. Spoon half the cranberry mixture into a pan. Place chicken breasts on top of the mixture, then spread the remaining cranberry apple combo over top of the chicken. Bake for 40 minutes while you go back to studying.

4) Then for...Dessert

French Toast

Ingredients:
8 slices bread of your choice, 4 eggs, 1 cup milk, 2 tbsp orange juice, 1 tbsp sugar, 1/2tsp vanilla extract, 1/4 tsp salt, 4 tbsp butter.

Directions:
Beat eggs with milk. Stir in sugar, vanilla, orange juice, and salt until well combined. Heat about 2 tbsp of butter in skillet on medium-high heat. Dip bread in egg mixture and lay in butter. Reduce heat to medium and cook bread a few minutes on each side until golden brown. Repeat with remaining bread, adding more butter as needed. Makes more than 4 servings.
