Combinations

Helllooo!  Following yesterday's Typical Monday, today was a typical Tuesday.  At least as typical as my Tuesday's have been for the past five months, and will be for the next two.  I had medical coding class in Gainesville.  I have to admit, I can't wait until this class is over.  As thankful as I am for the opportunity to take this "expenses paid" class, I'm tired of sitting in a classroom and not learning a thing!  I have lots of experience with coding, and some of my "classmates" do not, so there is a lot of repetitiveness involved.  Not to mention I have to be in Gainesville by 8:30!  

For breakfast, I was craving cereal, so I decided to satisfy that craving with this bowl:



1 cup Kashi Go Lean Crunch (it's under there!)1/2 cup hemp milk (it's under there too!)Sliced bananaHandful of microwaved blueberriesThis was my first time trying hemp milk.  It definitely has a distinct taste to it.  I'll have to try it a few more times to describe it, and decide if I like it enough to buy it again.  I really only eat/drink milk in cereal or other breakfast type bowls and green monsters.  Maybe I'll make a green monster tomorrow to see how that tastes.  I do love my almond milk, after all :).

Once I made it back home from Gainesville, I had some leftovers for lunch:



After a semi crisis at work (all is well!), I made it home and snacked on this:
 

Gala appleTablespoon melted Barney Butter and drizzled on topI broke a rule I set for myself.  I told myself I wouldn't eat almond butter after lunch time.  Oops!  The problem being that I don't have self control around nut butters.  I ate another tablespoon's worth of Barney Butter straight from the jar.  UGH!  I actually forgot about that rule I made until after I ate my apple.  Oh, well.  I'll attempt to abide by my rule starting tomorrow! 

I went on a 2.5 mile walk after my snack attack.  It was so humid out.  Where did the fall temperatures go?  I knew the humid weather would come back, but gosh, it felt more humid than a day in July.  I made an enchilada again for Thad.  I made something else for my dinner...

I had half an eggplant that I needed to use, so I got creative.  I sliced the eggplant in half and grilled it on the Foreman.  I compiled my ingredients:




1/2 an eggplant1/2 a tomato~1/2 cup quinoaSome chickpeasI topped the eggplant with the quinoa and tomato, and put the chickpeas in the pan along with the eggplant and drizzled balsamic vinegar over all of it:



I also picked some basil from the garden and chopped it up to throw on top.  On my plate:




I found it to be quite delicious, albeit an odd combination of ingredients!  Eggplant is quickly becoming one of my favorite vegetables.  It's giving sweet potato a run for the money!
