I had the opportunity to meet the Nicole Salgado, the author of The Bajio’s Bounty – Home Cooking from the Queretaro, Mexico Region. A cookbook full of authentic homestyle Mexican recipes. She has a real love for Mexican food and people and it shows in her selection of recipes collected from family and friends. I am really impressed with the book she has produced – So impressed that I bought a copy on the spot. When I flipped through it, I knew immediately that she had captured the essence of Mexican home cooking. Her book is a true labor of love to introduce the reader to homestyle cooking from her husband’s home state of Queretaro. If you were to visit someone’s home in central Mexico, most likely you would be served one or even many of the dishes she describes in the book.
