Cooking Up a Story: One Fish, Two Fish

The winner of our Green Eggs and Ham Cookbook giveaway was announced earlier this week and we were so excited that her entry was the one selected by Random.org. The Seuss book that she suggested we "cook up a story" around happens to be one of X (and my) all-time favorites - One Fish, Two Fish, Red Fish, Blue Fish!

So X and I put our heads together and brainstormed. A few ideas came to mind:

One Fish, Two Fish, Gold Fish, Bleu Fish - a twist on goldfish crackers made with cheddar and bleu cheesesFish Food - a nut-free trail mix made of dried fruit, pretzel sticks and nut-free granola crumblesYink's Pink Ink - a pink juice blend made with cranberry and white grape juice

What we finally settled on was a treat for our favorite character in the book. You'll find him near the end....or in the park, in the dark. We will take him home and we will call him Clark!

Clark's Bars

(makes 1 dozen bars)

1/2 cup wheat germ
3/4 cup whole wheat flour
1/4 teaspoon baking soda
1/8 teaspoon salt
1/4 cup butter
3/8 cup unsweetened applesauce
2 tablespoons packed brown sugar
1/4 cup chocolate chips
1/4 cup dried cranberries



Preheat the oven to 400 degrees F. Mix the wheat germ, whole wheat flour, baking soda, salt and brown sugar together in a large mixing bowl. Cut small pieces of the butter into this flour mixture (the best way is to reach in and do it by hand). Stir in the applesauce.
Pat the thick dough into a 9 x 9 brownie pan lined with parchment paper or into a non-stick individual dessert bar pan (that's what we used - that way you don't have to cut them into bars after you bake them). Mix the chocolate chips and cranberries together in a bowl and then sprinkle onto the dough evenly.
Bake 7 to 10 minutes, until edges are slightly browned and the chocolate chips are melted. Remove pan from oven and let Clark's Bars cool for another 7 to 10 minutes before enjoying! If you used a brownie pan, cut them into small squares or bars before serving.



X and I really enjoyed these - I mean, what's not to love about chocolate chips and dried cranberries? And I feel a little bit better about offering these two sweet ingredients on a high fiber, low sugar dessert bar. Not an everyday treat, for sure, but something you can feel good about indulging in, right?
