Corn Dogs
Both of my kids were intently watching me cut up hot dogs last night for dinner. Lance kept saying "I want a hot dog." To which I replied, "you can have these at dinner because I'm making corndogs." To which he kept replying "but I want a hot dog." Then I realized that he had no idea what a corn dog was! We've been on this diet almost 2 years and I've never made my kids corndogs -- how sad is that :( Well, we're not sad anymore! The 4 of us ate every single corndog I made last night (an entire package of hot dogs!) and I plan on making them throughout the summer. Not only because everyone loves corndogs, but also because they are so easy and kid-friendly. The sweet potato fries in the background (though slightly burned) are Lexie's spiced yam fries -- soooo good! I followed her method but made my own seasoning: I drizzled extra virgin olive oil on them instead of coconut oil and seasoned them with paprika, cumin, turmeric, and a tiny bit of agave nectar - yum! *Helpful hints: -The batter is just my pancake recipe with slightly less water, so feel free to substitute your favorite gluten/dairy free pancake recipe. An idea I got from our local news channel 4 during the "Mr. Food" segment. -I didn't have popcisle sticks so I cut mine in half and used toothpicks. -You'll have enough batter left over for about 4 pancakes the next morning (just thin out with some water), or you can make a few more corndogs. related searches : Corn
