Corn-Mushroom-Carrot Stir fry
I love making veggie stir frys,great option to get veggies in.and make my own variations/addition as per my taste...This dish i created is simple n easy..can adjust the ingredients quantity wise,(like mushrooms more,carrot-corn less)can put spices u like or omit some...the fresh n dried herbs gives the dish tht distinct flavor.Njoy.
U need- 1/2 cup Corn,10 small Mushroom,1Carrot or as required(i used frozen corn,chop the mushrooms,peel n chop the carrots) Garlic-8-10 chopped(or less) Green chilles-2-3 chopped(or less) Freshly ground black pepper-1/2 tsp Onion-1 sliced Ginger-1" piece-chopped finely turmeric powder-1/4 tsp Coriender-cumin powder-1/2 tsp Dried mint/basil-1/2 tsp each handful of chopped cilantro Black Mustard seeds-1 tsp oil-2 tblsp Salt to taste Lemon juice-to taste Heat oil in a pan,add mustard seeds...as they splutter add ginger-garlic-green chillies,saute for a min,add onions. When onions turn light golden in color add carrot and cover with a lid... As carrots r half done add mushrooms n corn n spices n cilantro...stir fry on high til some moisture is gone.add dried basil and mint.add salt.squeeze some lemon juice. Tastes great with chapathi,naan,steamed rice,cumin/basil rice,breads or with pasta dishes as a side dish... I love having with cumin rice/basil rice and bowl of fresh fruits.
