Cornbread Muffins With Greek Yogurt
It was raining when I got up this morning. Certain foods come to my mind when it rains. Hot chocolate, muffins, soup… Cornbread muffins. I would love to say that I baked these lovely cornbread muffins from scratch. But that’s not the case. This cornbread mix from Trader Joe’s rocks. It’s delicious, quick, and has an easy-to-follow recipe that your kids can help with. It’s not organic, but it’s reassuring to know that all products sold under the Trader Joe’s label contain NO genetically modified ingredients, and no artificial flavors or colors. What sets these muffins apart from plain cornbread muffins is the addition of greek yogurt, applesauce, and corn (and green chilis if you want to add some spice). I’m not opposed to using oil in recipes but it’s fun to experiment with other healthy ingredients. For this recipe I used a container of Chobani Greek Yogurt, Honey.
