Crab and Corn Fritters with Avocado and Pea Guacamole
Here is another great lunch idea. These don't have to be warmed up and are easy to pick up and dip in healthy, fibrous guacamole. Not to mention, these fritters are full of protein and pack a punch of zesty flavor. You can play with them - add sauteed onions, cilantro, parsley, chili powder, whatever your tastes desire. These fritters are great served with a salad for lunch, as an appetizer at your next party (especially if you miniaturize them), or with rice and vegetables for dinner.
Another note about my guacamole. I use lemon juice instead of lime juice as recommended by a Mexican student of mine. She makes a pureed guacamole for all of our parties and insists that lemon juice, not lime juice, is the way to go. Also, I use scallions instead of red onion because raw onion upsets my stomach. Another option is to saute and then cool the about 1/8 - 1/4 cup of finely chopped red onion. Click here to read recipe related searches : Crab
