Cracker Barrel Buttermilk Pancakes

Makes:  12 to 15 pancakes



2 cups sifted all-purpose flour

2 tsp baking soda

1 tsp salt heaping tsp sugar

2 eggs

2 cups buttermilk***



In a large bowl beat all of the ingredients with a spoon.   Pour into a 1/4 cup measures onto a lightly oiled hot griddle or electric frying pan to control the heat and keep it at an even temperature.

Serve with real butter & real maple syrup!
***SUBSTITITE BUTTERMILK
Ingredients:
Milk (just under one cup)
1 Tablespoon white vinegar or lemon juice
Preparation:
1. Place a Tablespoon of white vinegar or lemon juice in a liquid measuring cup.
2. Add enough milk to bring the liquid up to the one-cup line.
3. Let stand for five minute. Then use as much as your recipe calls for.
