Cream of Broccoli and Chicken Soup
Cream of Broccoli and Chicken Soup
Serves 3-4
1 pound chicken (cut in small pieces/diced) 1 pound broccoli florets 1 large yellow onion 3 cloves garlic, chopped or minced 1 TBSP olive oil 4 cups chicken broth 1 - 14 oz can coconut milk salt and pepper 1-2 avocados, diced Directions 1. Pour 3 1/2 cups of chicken broth and chicken pieces into crock pot. Cook on high for 1 hour. In the meanwhile... 2. Heat olive oil in large saute pan over medium-high heat. Add onion. 3. Once onions are translucent, add garlic, broccoli, and 1/2 cup chicken broth. Cover and steam for about 10 minutes. 4. Once broccoli is very very tender, remove pan from heat and allow to cool for a few minutes. 5. Add broccoli and onion mixture to blender or food processor (food processor is much better) and puree. 6. Add broccoli mixture to crock pot. Season with anything you like. Cook on high for one more hour. 7. Turn down heat and cook for one more hour like this. (Make sure to mix/stir occasionally) 8. For the final (4th hour) add can of coconut milk and continue cooking on low for one hour. 9. Serve topped with avocado pieces. related searches : Cream
