CREAM OF SPINACH SOUP
Spinach: 1 cup Onion : 1 Tomato: 2 Ginger : 2'' Garlic : 1 pod Milk: 1/2 cup Heavy Cream : 1/2 cup Salt : 1tsp Jaggery/Sugar: 1 tsp Cumin Powder : 1tsp Fussili Pasta: few Water : 1cup Method: Wash and roughly chop the spinach, onion, tomatoes, ginger and garlic. Boil all the ingredients in water. Let it cool down and make a smooth puree in a blender. Put the spinach puree on a low heat and gradually add milk and cream to get the desired consistency of the soup. Add one tsp of salt, cumin and jaggery and some fussili pasta and simmer for 5 minutes. Serve it with butter and pasta on top of it.
