Creamed spinach

i know i know you dont really like spinach -- but you need to eat the green vegetables -- heres the recipe for you.  Simple creamed spinach casserole looking all pretty just waiting for you to dig in!

creamed spinach

2 packages frozen spinach -- 10 oz each
6 ounces cream cheese -- softened
1/2 cup butter -- melted
1 cup crushed Ritz crackers

preheat oven to 350 degrees.  thaw spinach and squeeze to remove excess water. grease a pretty casserole dish and set aside. in a large mixing bowl, combine the spinach, cream cheese, and 1/4 cup of melted butter. place mixture in the casserole dish. sprinkle with the cracker crumbs then drizzle with remaining 1/4 cup of butter.  bake at 350 degrees for 25 minutes.
